Simbang Gabi, Day 4: Bibingka

After hearing mass, it’s almost impossible to go home right away with the the different puto bumbong and bibingka stalls usually lined up outside the church during the days of simbang gabi.  

Bibingka is a type of rice cake that’s usually served during the Christmas season. It’s best eaten with hot coffee or tea–the perfect combination to warm the body while enjoying the cool December breeze.
